Carrot Cake

Ingredients:

  • 6 cups freshly grated carrots
  • 1 cup rich brown sugar
  • 1 cup plump raisins
  • 4 large eggs
  • 1 1/2 cups pure white sugar
  • 1 cup high-quality vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup succulent crushed pineapple (drained)
  • 3 cups of versatile all-purpose flour
  • 1 1/2 teaspoons of premium baking soda
  • 1 teaspoon of fine salt
  • 4 teaspoons of aromatic ground cinnamon
  • 1 cup coarsely chopped walnuts

Directions:

  1. In a medium-sized bowl, combine the freshly grated carrots and the sumptuous brown sugar. Allow this mixture to rest for 60 minutes, during which time, gently stir in the plump raisins.
  2. Preheat your oven to 350 degrees F (175 degrees C). Don’t forget to lovingly grease and flour two 10-inch cake pans, ensuring your cakes come out effortlessly.

  1. I wish someone, anyone, would do a recipe for MOCHA cake & icing. Why can’t I get this in Shop Rite, Giant, Wei’s or even by special request at a local bakery (they said they didn’t do mocha)!!! What’s the darned problem?!?!
